Abstract:In this study, the proportion of edible tissue, conventional nutrients, content of free amino acids and taste characteristics of adult female E. sinensis cultured at different periods in the Yangtze River Delta (Shanghai, Suzhou and Taizhou) were detected and analyzed. The results showed that the Condition Factor (CF) of adult female crabs cultured in the Yangtze River Delta from September to November had no significant change (P>0.05); The meat yield (MY) of female crabs in Shanghai was the highest in November, but the MY of female crabs in Suzhou and Taizhou was the highest in September; Gonadosomatic index (GSI) and protein content in the ovaries significantly increased (P<0.05); Hepatopancreas index (HSI) was negatively correlated with GSI, and the lipid content in hepatopancreas was the highest with the trend of first rising and then falling; Moisture content in muscle was significantly higher than that in gonads and hepatopancreas (P<0.05). In addition, a total of 21 free amino acids (FAAs) were detected in the muscle of female crabs, and the content of total amino acids (TAA) and the taste intensity of sweet amino acids were increased, and the best taste was in November.. Two-factor analysis of variance showed that the nutritional quality of female crabs in the Yangtze River Delta region was mainly affected by period factors, and the contents of moisture and protein in muscle were only affected by regional factors, which then affected the content of some free amino acids in muscle.
